Meal Prep: Chicken Tender Wraps (Meatless Option!)

I am so much like my mom in many ways, and there is one meal I remember she would always prepare for me to take to my lunch in school and it was this: chicken tender wraps. I remember sitting at the lunch table with my friends and more often than not I would give up half of my wrap so they could split it amongst themselves…it was THAT good. I remember there were usually six or seven of us and they would literally pass the wrap around and take bites from it.

Now I find myself making this recipe at least once a week for my husband and I. It’s the perfect meal-prep option because it’s easy to make and requires only a few ingredients.  Plus, you can use whatever ingredients you have on hand. I’ve swapped out different vegetables and sauces to adjust the recipe depending on what we have at home. My favorite combination is colby-jack cheese, sweet BBQ sauce, chicken tenders, carrots, red peppers (roasted or freshly sliced) and lettuce.

I have made this recipe with Trader Joe’s chicken tenders but I have also used Gardein’s Seven Grain Crispy Tenders for a Meatless Monday lunch option. The Gardein tenders are so crispy and taste great when used for this recipe. I love that I can still enjoy one of my favorite meals as a kid and celebrate Meatless Monday at the same time.

When I make this for our lunches I usually pair it up with some fruit or bag of chips (Popchips have always been a favorite of mine).

I have also made this recipe into a chicken tender salad by foregoing the wrap and putting all the ingredients on top of a bowl of lettuce and adding my favorite salad dressing. A crispy, crunchy salad or a BBQ chicken cheddar wrap – the choice is yours!
