Black Bean Burger Salad

The Meatless Monday campaign is a global movement to encourage individuals, families and communities to have one designated meat-free day a week. The movement has brought awareness to the health benefits of not eating meat for individuals as well how that decision positively affects the health of our planet. The movement has spread to hospitals, schools, workplaces and even restaurants around the world. Despite the simple strategy of cutting out meat one day a week, many people might feel unsure of where to start. There are many companies that offer meat-free options that make meatless meals easy and delicious.

I recently became part of the Meatless Monday campaign’s “Bloggers on Board” program.  It’s inspiring to be one among many blogs that help spread the positive message of Meatless Monday while providing readers with delicious meatless options.

Through this program I was introduced to Gardein, a company who is passionate about providing meatless options for breakfast, lunch, dinner and even appetizers! My favorite product that I’ve tried is the Chipotle Black Bean Burger and it’s the perfect edition to my favorite lunch to make on Mondays: a black bean burger salad.

This is my go-to for lunch on a busy day because it’s so simple to put together and it tastes delicious.  The combination of crunchy bell peppers, tortilla strips and avocado are perfect companions for a crunchy black bean burger. Any salad dressing would work for this recipe but Annie’s roasted red pepper vinaigrette is one of my favorites.
